Noodle Kingdom

We love noodles. All types. Thick, thin. Home cooked - Fried- Instant -With soup - Dry. We love it all.

So living in a Noodle kingdom , I just had to put up a post on our favorite type of noodles.

We usually go for the Guangdong style Hand pulled noodles - "La Mian"made by stretching and pulling the dough into strands
or the Shanxi Knife cut noodles - :Dao Xiao Mian" where the chef uses a knife to cut dough into long strips.

Most areas will have a local Shaanxi Noodle shop and if you visit you should not miss the Biang Biang noodles or the Belt noodles. The character " Biang" is a complex character made of 57 strokes and is the sound while the chef pulls the dough and hits it on the table while makes the noodles.

Another of our favourite style of Noodles is the Dan Dan noodle. Sichuan style noodles with pork and scallions. Dan dan is referred to the pole that roadside vendors used to hang the basket of noodles and the sauce.

And then  we have the Instant noodles.You hit the local supermarkets and you have a range of options and flavors to choose from. You just boil water, add the sauce spices and condiments and voila Chinese noodles in the comfort of your home.
